A personal favorite of the Glengarry Brewster, Dopplebock was once brewed by monks in the Middle Ages to be consumed during Lent. It typically is named something with "ator" at the end in honor of the original monastery that brewed it in Bavaria. Maybe I should call it "Glengarryator"? No? Anyway, this particular recipe can be traced to Dan Carey of New Glarus Brewing fame in Dane Co. Wisconsin. We thank him profusely for this. The Infusion process however, is all Glengarry.
Near and dear to the ethnicity of the Glengarry brewmaster's taste buds is the Dark Czech Lagers produced in and around Prague and Plzeň.
